A Southern snacking staple.

Luckily for me, my grill master extraordinaire is also one fine peanut boiler.

Southern Boiled Peanuts | Oysters & Pearls

Saturday Wheat decided that he just absolutely had to spend the afternoon boiling peanuts. And it is always A-okay with me when he decides that this must happen. I realize there isn’t much of a science to boiling peanuts, but if you’ve never done it, you might be interested in how Wheat does it. I have to say, he makes some of the best boiled peanuts I’ve had! The first time I came up to Bainbridge to see Wheat, he had just made a batch for us to take with us on the river. It may have been what won me over! That, and he cleaned his apartment right before I got there, thereby tricking me into thinking he was OCD about cleaning like me. But that’s neither here nor there.

For a big batch like this (two 3.5 lb bags of green peanuts), Wheat used a propane burner and did it outside. You can most certainly do it in a pot on the stove – he usually does, too.

Anyway, dump your peanuts into a Hugh Jass pot, and fill to the top with water. You will have to add water over the course of the cooking to make sure the peanuts don’t dry out.

For two 3.5 pound bags of green peanuts (we got these at Harvey’s in Bainbridge), add one to 1.5 cups of salt (Wheat uses table/iodized salt), depending on your tastes. I would say to add one cup and boil them for a while, then try one and see if you need/want to add more. For one bag of peanuts (approximately 3.5 pounds of dry green peanuts), add one half cup (or up to a cup) of iodized salt.

Bring to a rolling boil and boil away! It usually takes two to three hours to boil them to perfection. Wheat just uses the “taste it and see” method of seeing if they are done yet.

When they are, you could either dump the whole pot into a strainer, or use a fine mesh sieve like Wheat is doing to get them out of the pot above. You just don’t need all that salty water. Enjoy immediately, or store them in the fridge and enjoy them until they’re gone!

I’d say that boiled peanuts are the ultimate southern summer snack, wouldn’t you?
